Making banana fritters is a way to use all those over-ripe bananas. It is a nice occasional treat, satisfying and easy to make.


10 small ripe bananas, mashed
3-4 tablespoons of all purpose flour
2 eggs (optional)
1 teaspoon baking powder
3 tablespoon of brown sugar
1 teaspoon vanilla essence
Pinch of salt
Oil for deep frying


Mix the flour, baking powder, eggs, vanilla essence, salt and sugar in a bowl.
Stir it into the mashed bananas with a fork. (Add the fourth tbs of flour if mixture is too soft.).
Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried so you can deep-fry if you want).

Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot  Fry one side until medium brown and flip over to fry the other side. You can fry more than one at a time but make sure you space them out in the pan so that they do not stick together.

Sprinkle with white sugar and eat warm or cold

Note: Put some paper napkins on your serving plate so that some of the oil can be absorbed.
